Overview
FOG Regulations, Grease Separation & Kitchen Drain Defense
Commercial kitchens generate immense volumes of fats, oils, and grease (FOG) alongside hot dishwater, food solids, and heavy detergents. When hot, emulsified grease enters drainage piping, it cools rapidly and coats interior pipe walls, gradually congealing into rock-hard mineralized grease deposits. Across the San Francisco Peninsula, municipal wastewater authorities (including San Mateo County Environmental Health, City of San Jose, Palo Alto, and local sanitary districts) enforce stringent zero-tolerance FOG ordinances. Uncontained grease that reaches municipal sewer mains causes catastrophic backups, sewer spills into San Francisco Bay, and immediate health department closures with escalating penalties.
Effective grease management requires engineered separation tailored to your kitchen's specific flow velocity and equipment layout. Point-of-use Hydromechanical Grease Interceptors (HGIs)—compact units installed under commercial three-compartment sinks or recessed flush into kitchen tile floors—utilize flow control diffusers, air entrainment, and internal baffling to slow wastewater velocity and allow low-density grease to separate to the surface before reaching the sewer. For high-volume restaurants, cafeterias, and food production plants, high-capacity exterior Gravity Grease Interceptors (GGIs)—ranging from 750 to 2,500+ gallons in underground precast concrete or poly vaults—provide the hydraulic retention time necessary to handle peak commercial dinner services.
Daso Plumbing provides complete commercial kitchen plumbing and compliance support. From sizing and installing modern corrosion-resistant thermoplastic interceptors (such as Schier and Endura) for new restaurant tenant improvements to replacing collapsed concrete grease vaults, we handle all engineering, health department plans, and building permits. When grease lines back up during rush service, our high-pressure commercial hydro-jetting equipment scours kitchen laterals clean from the trap directly to the street main.
